Wonderful! I'm so glad you're doing this! I started pressure canning meats about 5 years ago and I can't tell you what a good investment it has been. With the price of meat skyrocketing, I can "shop my pantry" instead of the stores, buying only what's on sale and then canning that for what I call my Future Food. John and I can usually make a quart jar of chuck roast, for instance, go FOUR meals with the use of clever sides. :-) Plus the dogs get the juices.

I don't bother with most jellies or chutneys or weird pickled stuff either. Ick. Just the basics: meats, vegs, and in-season fruits. BTW, what a behemoth canner! Wow!

All American makes FIVE sizes of canner, and this one I have is the next-to-the-smallest one! I can't even imagine what kind of cooktop you'd need to hold the biggest ones. Much less how you'd lift the damn thing on and off the burner.

Yes I agree, amazing value, to grow or buy things in season/and-or on sale, and then preserving it all for later use. I never thought I'd have the sort of lifestyle where I could get it together to plan for such things...but then I never thought I'd be doing most of the things I'm doing now!
